BLUEBERRY MUFFINS
Ingredients for muffins:
2 1/2 cups, all-purpose flour
1 tbsp. Baking powder
1 tsp. Baking soda
1/3 cup sugar
2 eggs
1 cup sour cream
1/4 cup melted butter
1/2 cup blueberry filling
1/2 cup blueberry for topping
Instructions:
Preheat oven to 350F, line muffin pan with paper cups.
Combine all dry ingredients and sift.
Combine eggs, sour cream and melted butter.
Mix the wet and dry ingredients together.
Fold in the blueberry filling.
Scoop into the muffin pan.
Top with blueberry filling and streusel.
Bake at 350F for 30 minutes or until cake tester comes out clean.
Ingredients for streusel topping:
1/2 cup light brown sugar
1/3 cup butter
cut into cubes
1 pinch salt
1 cup bread flour
Instructions:
Mix all the ingredients together until crumbly.
