Cebiche de Camarones


Cebiche de Camarones

A delicious dish of seafood marinated in citrus juices and tomato. Recipe from Nestlé Ecuador.

Ingredients

2 Oranges
2 Lemons
1 tsp Mustard, smooth (choose a mild type)
2 tbsp Ketchup
2 tbsp Vegetable oil
500 g / 1 lb Prawns, peeled and cooked (or medium shrimp)
1 Red onion (peeled and very thinly sliced)
1 tbsp Coriander leaf (Cilantro)
Salt and pepper
Freshly popped corn to serve

Preparation steps

Squeeze the juice from the oranges and lemons and place in a bowl with the mustard, tomato ketchup and oil. Mix together well.
Add the prawns and the sliced onion and mix well to coat.
Cover the bowl and refrigerate. Allow at least two hours to marinate, overnight it best.
Before serving stir in the chopped coriander, taste and add salt and pepper if necessary.
Serve in individual shallow bowls with freshly popped corn to be added by diners. The popcorn soaks up the delicious juices.
