Pancakes with honey apple compote

Start the day with these delicious yogurt pancakes topped with spicy honey apple pieces. Adapted from a recipe by Nestlé Brazil.

Ingredients
1 pot (150g) NESTLÉ Natural yogurt
125 g All purpose flour
2 Eggs
1 tbsp Sugar
3 tbsp Butter, unsalted (melted)
2 tsp Baking powder
1 pinch Salt
FOR THE APPLE COMPOTE
2 Apples (peeled, cored and diced)
1 tsp Lime juice, fresh
1/2 tsp Cinnamon, ground
6 tbsp Honey
2 tbsp Water
Preparation steps
Prepare the apple compote first. This can be done the day before if required. Place the diced apples, lime juice and 2 tbsps water in a small saucepan. Cook over a medium heat for approx. 10 minutes or until the apples are soft. Add more water if necessary.
Remove from the heat and add the cinnamon and honey. Stir to mix. The compote is now ready. (If you prefer a smooth sauce, puree the mixture in a liquidizer.)
For the pancakes. Place the NESTLE natural yogurt, flour, eggs, sugar, baking powder, salt and 2 tbsps of melted butter in a liquidiser. Process to give a smooth, thick batter.
Heat a small amount of the remaining butter in a non stick frying pan. Place 1/4 cup (60ml) of batter in the centre of the hot pan. When bubbles start to appear on the surface of the pancake flip it over with a spatula and cook on the other side for a minute or until golden brown. Do not have the heat to high or the pancakes will cook too quickly on the outside.
Remove the cooked pancake from the pan and set aside in a warm place. Cook the remaining pancakes in the same way.
Serve the pancakes with the warm apple compote.
