Apple Pie

200 g / 8 oz Plain flour (or All purpose flour)
100 g / 4 oz Margarine (or butter, softened)
2 tbsp Icing sugar (or powdered/confectioners sugar)
1/2 tsp Baking powder
1 large Egg (lightly beaten)
1 tbsp Cream 12% (or half and half)
500 g / 1 lb Apples, cooking,
2 tbsp White sugar
1 tbsp Breadcrumbs, dried
1 tsp Lemon juice, fresh
Milk for brushing

1 tbsp Breadcrumbs, dried

Preparation steps
Pre-heat the oven to 180°C/350°F. Sift the flour into a mixing bowl with the icing sugar and baking powder. Add the egg, margarine/butter and cream and mix to form a smooth dough - this is easiest done in a food mixer or food processor.
Divide the dough in half. Wrap one half in plastic food wrap to prevent it from drying out. Place the remaining half in a 20cm/8" springform cake tin or pan. Using your fingers to press out the dough to cover the bottom of the tin and work it up the sides to give a shallow border of about 2cm/1".
Peel the apples and using a coarse grater, grate the apples into a bowl. Mix with the lemon juice, sugar and breadcrumbs.
Spread the grated apple mixture in the centre of the dough in the tin.
On a floured board roll out the remaining dough to make a circle just slightly bigger than the cake tin/pan. Place the dough circle on top of the apple mixture and tuck down around the sides to meet the lower pastry case. Prick the surface with a fork and then brush with milk and bake for 40 minutes at 180°C/350°F.
To serve carefully remove the outer sleeve of the spring form pan and carefully transfer the pie from the base to a serving plate. Serve hot or allow to cool and serve cold. Enjoy with a scoop of your favorite Nestlé ice cream.
