Spiced coffee nut loaf

A moist quick bread with cinnamon and coffee. This can be made the day before for a relaxed start to the day. Recipe provided by Nestlé USA.

Ingredients

250 g All purpose flour
2 tsp Cinnamon, ground
2 tsp Baking powder
1/2 tsp Salt
1 tbsp Water (hot)
300 g Sugar
75 g Butter, unsalted (softened)
250 g Sour cream
2 Eggs
100 g Walnuts (chopped)
3 tbsp NESCAFÉ Red Cup ((or TASTER'S CHOICE))

Preparation steps


Preheat the oven to 180°C/350°F. Grease a 2lb/1kg loaf pan. (9"x5"/22cm x12cm)

Mix together the flour, cinnamon, baking powder and salt in a medium bowl. In a small bowl mix together the NESCAFE and hot water. Stir until the coffee is dissolved.

In a large mixing bowl mix together the sugar and butter. Add the sour cream and eggs and beat until creamy. Gradually beat in the flour mixture. Add the coffee mixture and 3/4 of the chopped walnuts. Mix well.

Spread the batter into the prepared loaf pan. Sprinkle with the remaining nuts.

Bake at 180°C/350°F for 65- 70 minutes or until a wooden pick inserted into the centre comes out clean. Cool the pan on a wire rack for 15 minutes. Remove the loaf from the pan. Cool completely on the wire rack.
