Tuscan bean pot

A simple vegetable casserole inspired by the flavors of Italy. Continue the Italian theme by serving this tasty dish with some fresh Foccacia bread.

Ingredients


1 tbsp Olive oil
2 cloves Garlic (peeled and finely chopped)
1 Yellow bell pepper (Deseeded and sliced)
2 Courgettes (or Zucchini, thickly sliced)
2 sprigs Rosemary, fresh
Chopped flat leaf parsley to garnish
1 can (420g) / 1 can (15oz) Butter bean, canned (or Lima beans)
1 can (400g) / 1 can (14oz) Borlotti beans, canned
1/2 tsp Chilli powder (optional)
1 can (400g) / 1 can (14oz) Artichoke hearts (drained and rinsed)
250 ml / 1 cup Water
Salt and pepper
1 jar / 1 pot (15oz) BUITONI Napolitana Sauce (or BUITONI Roasted Garlic Marinara sauce)


Preparation steps


Heat the oil in a heavy based saucepan, add the chopped garlic, yellow pepper strips and the sliced courgettes. Fry gently for 3-4 minutes stirring to prevent sticking.


Add the BUITONI Napolitana sauce or BUITONI Roasted Garlic Marinara sauce, 250ml/1 cup water,sprigs of rosemary and chilli powder if using. Bring up to the boil stirring well. Reduce the heat and cook gently for 10 minutes.

Drain and rinse the beans and add to the pan with the drained artichoke hearts and continue to cook gently for a further 10 minutes.

Check and adjust the seasoning to taste and serve sprinkled with choppped parsley.
